Danish Rice Pudding - Risalamande

Danish rice pudding, made with rice, whipped cream, and a hidden almond, is traditionally called "Risalamande." It's a beloved dessert in Denmark, particularly during the Christmas season. The dish is a creamy, sweet rice pudding mixed with whipped cream, sugar, and vanilla, often served with a warm cherry sauce on top. The unique and fun aspect of Risalamande is the single whole almond hidden in the pudding. According to tradition, the person who finds the almond in their serving is awarded a small prize or is said to have good luck. This tradition makes Risalamande not just a dessert but also a playful part of Danish Christmas celebrations.

Ingredients
  • 3 tbsp cold water
  • 14 oz unflavored gelatin
  • Rice
  • 4 cups milk
  • 1 cup rice
  • 7 tbsp sugar
  • 1 tsp vanilla
  • Pinch of salt
  • Whipped Cream
  • 1 cup heavy cream
Instructions
  1. Mix cold water and gelatin then put in microwave for 20-30 seconds until gelatin completely dissolves.
  2. Rice
  3. Cook milk with rice on medium/low heat until rice is soft. Stir constantly, milk can burn easily.
  4. Add gelatin, salt, and sugar to cooked rice.
  5. Rice mixture will need to completely cool before the next steps. Leave in fridge for at least 30 minutes.
  6. Whipped Cream
  7. Whip the cream and add vanilla once soft peaks form.
  8. Fold the whipped cream into the COLD rice mixture. Add one almond if desired. Put in refrigerator until ready to serve.
  9. Prepare
  10. Eat plain or add toppings. (Cinnamon, canned cherries, blue berries, etc.)
