Axel and I had a week at the beach for a family reunion recently. We also had a wedding ceremony. Our three children walked us down the aisle and then officiated the ceremony. To say there were tears is an understatement. I don’t think anyone had dry eyes. Surrounded by family and friends, Axel and I vowed laughter and love as we embrace our new adventures. On Sunday Axel and I made brunch. Below is the French Toast Casserole that we served.

French Toast Casserole

Wake up to the cozy aroma of this slow-cooked French toast casserole; rich, custardy, and perfectly spiced with cinnamon and nutmeg. Made with your favorite bread (challah is a dream), it’s the easiest way to serve a warm, comforting breakfast with almost no morning prep.

Ingredients
  • Loaf of favorite bread (I love challah) cut up into 1 inch cubes 1
  • Crock Pot
  • 6 eggs
  • 1 tbsp vanilla
  • 1 cup heavy whipping cream
  • 1 cup milk
  • 3 tbsp melted butter
  • ½ cup brown sugar
  • ½ tsp nutmeg
  • ½ tsp salt
  • 1 tsp cinnamon

Substitutions
  1. For: Loaf of favorite bread (I love challah) cut up into 1 inch cubes use: If you use basic white bread from the store, I recommend mixing it with a dense bread otherwise it may get ‘gummy’.
Instructions
  1. Mix all eggs, dairy and spices in crock pot until well blended.
  2. Cut bread into large chunks (about 1 inch) and add to crock pot
  3. Gently mix to incorporate liquid until all of the bread is well soaked. Add milk and cream as needed.
  4. Turn crock pot on low for 2.5 to 3 hours (we just set it to run for 3 hours, and our crock pot kept it warm until morning.)
  5. Serve with your favorite syrup, fruit, or whipped cream
