Karla’s Dinner for Bruno: Spätzle

Ingredients

2 cups all-purpose flour

1 1/2 teaspoons salt

4 large eggs- whisked

1/2 cup milk 1

Butter to keep from clumping

Bread Crumbs on top
Substitutions

For: 1/2 cup milk use: Water can be used when milk is not available
Instructions

Add the flour and salt to the bowl of a stand mixer. Stir to combine. Add eggs. Add milk slowly until dough starts to form a ball. Attach a dough hook to the stand mixer and "knead" the dough for 15 minutes, or dough is a smooth ball.

Bring at least 2 quarts of lightly salted water to a boil, then reduce to a simmer. Use a Spätzle maker or potato ricer to press noodles into the simmering water and cook for about 2-3 minutes, or until the noodles float to the top. Use a slotted spoon to transfer the noodles to a colander, and then dump the noodles in a large bowl of ice water. Drain the noodles again.

Mix the breadcrumbs and melted butter then put on top before serving.

When making it ahead, warm the noodles in a pan before adding the topping.
- Left over Spätzle

Fry in a pan with butter (some noodles will get crispy) and serve.
- Kase Spätzle

Fry chopped onions in a pan until translucent. Use extra butter to pour into Spätzle so it doesn’t dry out. Mix onions (with extra butter), Spätzle, and cheese (I like mozzarella and Gruyere cheese).

Bake at 400 degrees F. until cheese begins to turn brown on the edges.
