I have been busy playing with recipes that have lower sugar and sneak in fruits and veggies. This is one of my favorites.

Monica's Zero Sugar Versatile Cake

Monica’s Zero Sugar Versatile Cake is a delicious and guilt-free treat that proves healthy can indeed taste heavenly. Packed with naturally sweet fruits and vegetables like zucchini, bananas, apples, carrots, or sweet potatoes, this moist and tender cake skips added sugars entirely while providing a subtly sweet and satisfying bite. Enhanced with hints of vanilla and almond, and balanced by the tangy brightness of apple cider vinegar, each slice feels indulgent yet nourishing. Easily adaptable, this recipe invites experimentation—swap in oats for extra texture, or your favorite seasonal produce for endless flavorful possibilities. Whether served as a wholesome dessert or a comforting breakfast, this cake redefines what it means to bake something that is both nourishing and irresistibly delicious.

Ingredients
  • Blend
  • 2 Eggs
  • 1 cup grated zucchini. Remove access water via cheese cloth or clean towel. 1
  • 1 - 2 Bananas
  • 1 Apple
  • 1/2 to 3/4 cup almond or oat milk
  • 2 tsp Vanilla
  • 1 tsp almond extract (optional)
  • ½ cup melted butter
  • Cake
  • 1-1 ½ cups all-purpose flour (King Arthur) 2
  • 1 tsp salt
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/3 cup apple cider vinegar (optional)

Substitutions
  1. For: 1 cup grated zucchini. Remove access water via cheese cloth or clean towel. use: Carrots or sweet potatoes are also a good addition or substitution.
  2. For: 1-1 ½ cups all-purpose flour (King Arthur) use: Use a mixture of half flour and half oats, which gives a little more depth to the cake.
Instructions
  1. Prepare
  2. Preheat oven to 350 degrees Fahrenheit.
  3. Blend
  4. Add all ingredients to a blender. Blend until smooth.
  5. Cake
  6. Move all ingredients to bowl or mixer and add flour, salt, baking powder, baking soda, vinegar, and mix until smooth and not runny. Should be consistency of honey.
  7. Bake
  8. Add to greased baking dish. I use a rectangular brownie pan. Baking time depends on how shallow your baking dish is. Since mine comes out as a ½ sheet cake, it usually takes about 15-20 minutes. Make sure a knife or skewer comes out clean.
