1.00 In a bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.
2.00 In a large mixing bowl, combine the flour and salt. Make a well in the center.
3.00 Pour the yeast mixture, mashed potatoes, and fat into the well. Mix the ingredients until a dough forms.
4.00 Knead the dough on a floured surface for about 8-10 minutes until it becomes smooth and elastic.
5.00 Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place for 1-2 hours or until it doubles in size.
6.00 Punch down the risen dough and divide it into equal portions. Shape each portion into a roll.
