1 cup grated zucchini. Remove access water via cheese cloth or clean towel. 1

1 - 2 Bananas

1 Apple

1/2 to 3/4 cup almond or oat milk

2 tsp Vanilla

1 tsp almond extract (optional)

½ cup melted butter

1-1 ½ cups all-purpose flour (King Arthur) 2

1 tsp salt

2 tsp baking powder

1 tsp baking soda

1/3 cup apple cider vinegar (optional)
Substitutions

For: 1 cup grated zucchini. Remove access water via cheese cloth or clean towel. use: Carrots or sweet potatoes are also a good addition or substitution.

For: 1-1 ½ cups all-purpose flour (King Arthur) use: Use a mixture of half flour and half oats, which gives a little more depth to the cake.
Instructions

Preheat oven to 350 degrees Fahrenheit.
- Blend

Add all ingredients to a blender. Blend until smooth.
- Cake

Move all ingredients to bowl or mixer and add flour, salt, baking powder, baking soda, vinegar, and mix until smooth and not runny. Should be consistency of honey.
- Bake

Add to greased baking dish. I use a rectangular brownie pan. Baking time depends on how shallow your baking dish is. Since mine comes out as a ½ sheet cake, it usually takes about 15-20 minutes. Make sure a knife or skewer comes out clean.

Cook time: 20 minutes
