Not like most goulash on the planet, this was one of my favorite dishes growing up. It may be the simplicity, or now that it stirs memories of helping mom in the kitchen and learning the very basics of cooking.

Ingredients and Substitutions

2.00 1/2 yellow onion, diced
3.00 1 green bell pepper, diced
4.00 1 red bell pepper, diced
5.00 2 Cloves of garlic, minced Joanne would NEVER have cooked with garlic, this is my addition!
6.00 2 - 28oz cans of whole stewed tomatoes
7.00 1 - 28 oz can tomato puree Can put another can of whole tomatoes with juice into food processor and chop to medium pieces
8.00 1 tblsp dried oregano
8.50 1 tblsp dried basil
11.00 1/4 tsp crushed red pepper flakes
12.00 Salt and pepper to taste
13.00 2 lb box of elbow macaroni, Joanne always used Mullers

Instructions

1.00 Fill pasta pot with recommended water, salt to taste, bring to a boil and prepare macaroni as directed on box.
2.00 Brown ground beef in medium skillet. Remove meat and all but 2 tblsp of grease. Add vegies and sweat until soft and onions are clear.
3.00 Add cooked ground beef and cooked vegetables to a sauce pan that is large enough to hold all of the ingredients. Add all of the tomatoes and rest of the spices to the pot and simmer. Add the pasta once fully cooked and continue to simmer for 20 to 30 minutes.

Ingredients
  • 1 lb lean ground beef
  • 1/2 yellow onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 2 Cloves of garlic, minced 1
  • 2 - 28oz cans of whole stewed tomatoes
  • 1 - 28 oz can tomato puree 2
  • 1 tblsp dried oregano
